Ingredients

1 ½ pounds chicken thighs, boneless and skinless

1 tablespoon olive oil

1 large onion, chopped

3 cloves garlic, minced

1 tablespoon fresh ginger, grated

2 tablespoons tomato paste

1 teaspoon ground cumin

1 teaspoon ground coriander

1 teaspoon turmeric

1 teaspoon paprika

¼ teaspoon cayenne pepper (optional)

1 cup coconut milk

1 cup chicken broth

1 tablespoon lime juice

¼ cup chopped fresh cilantro

Salt and black pepper to taste


Instructions

1. Season chicken thighs with salt and pepper. Sear in hot oil in a Dutch oven or skillet until browned on both sides. Remove and set aside.

2. In the same pot, cook onion until translucent. Add garlic and ginger, stirring until fragrant.

3. Stir in tomato paste, cumin, coriander, turmeric, paprika, and cayenne. Cook for 1–2 minutes to bloom the spices.

4. Add coconut milk and chicken broth, scraping the bottom of the pan. Return chicken to the pot. Simmer uncovered for 20–30 minutes.

5. Stir in lime juice and adjust seasoning. Top with chopped cilantro and serve hot.

Notes

For a deeper flavor, marinate the chicken in lime juice and spices for 30 minutes beforehand.
