Ingredients

4 cod fillets (about 6 oz each)

1 cup panko breadcrumbs

1/2 cup grated Parmesan cheese

1 teaspoon garlic powder

1/2 teaspoon paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

2 tablespoons fresh parsley, chopped

1 large egg

1 tablespoon olive oil (or olive oil spray)

Lemon wedges for serving

Optional: fresh thyme or dill for garnish


Instructions

  1. Pat cod fillets dry with paper towels and season both sides with salt and pepper.
  2. In a shallow bowl, whisk the egg. In another bowl, mix panko, Parmesan, garlic powder, paprika, salt, pepper, and parsley.
  3. Dip each fillet in the egg, then coat thoroughly with the breadcrumb mixture.
  4. Preheat air fryer to 400°F (200°C) for 3–5 minutes. Lightly spray the basket with olive oil.
  5. Place fillets in the basket in a single layer. Spray the tops lightly with olive oil.
  6. Air fry for 10–12 minutes, flipping halfway, until the coating is golden and the fish flakes easily with a fork.
  7. Serve immediately with lemon wedges and optional herbs.
