Ingredients
2 cups shredded cooked chicken (or beef, beans, or cheese for variations)
1 teaspoon chili powder
1/2 teaspoon cumin
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon paprika
1/4 teaspoon salt
1/4 teaspoon black pepper
1/2 cup shredded cheese (cheddar, Monterey Jack, or a blend)
12 small corn tortillas (or flour tortillas if preferred)
1 tablespoon vegetable oil (for brushing or spraying)
Optional toppings: guacamole, salsa, sour cream, chopped cilantro, diced tomatoes, sliced jalapeños
Instructions
- Prepare the Filling: In a bowl, mix the shredded chicken with chili powder, cumin, garlic powder, onion powder, paprika, salt, and black pepper. Stir in the cheese.
- Warm the Tortillas: Wrap tortillas in a damp paper towel and microwave for 20-30 seconds until soft.
- Assemble the Taquitos: Place 2 tablespoons of filling on one edge of a tortilla, roll it tightly, and place it seam-side down. Repeat for all tortillas.
- Preheat the Air Fryer: Set to 375°F (190°C) and allow to preheat.
- Arrange and Brush with Oil: Lightly spray or brush taquitos with oil and place them in a single layer in the air fryer basket.
- Cook: Air fry at 375°F (190°C) for 8-10 minutes, flipping halfway through, until crispy and golden brown.
- Serve and Enjoy: Let cool slightly and serve with your favorite toppings.
