Ingredients

2 1/2 cups all-purpose flour

1 teaspoon baking powder

1/4 teaspoon salt

3/4 cup unsalted butter, softened

1 cup granulated sugar

1 large egg

1 teaspoon almond extract

1 teaspoon vanilla extract

1/3 cup sliced almonds

2 tablespoons powdered sugar


Instructions

1. Preheat the oven to 350°F and line a baking sheet with parchment paper.

2. In a medium bowl, whisk together the flour, baking powder, and salt.

3. In a large bowl, beat the softened butter and granulated sugar until light and fluffy.

4. Add the egg, almond extract, and vanilla extract, then mix until smooth.

5. Gradually add the dry ingredients to the wet ingredients and mix until a soft dough forms.

6. Scoop out portions of dough and roll them into 1-inch balls.

7. Place the dough balls on the prepared baking sheet and gently flatten them slightly.

8. Press sliced almonds onto the tops of the cookies.

10. Let the cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack.

Notes

Do not overbake these almond cookies, because they can go from soft and tender to dry very quickly. Take them out when the edges are just lightly golden and the centers still look slightly soft.
