Ingredients

1 lb ground beef

3 cups diced potatoes (peeled)

2 medium carrots, peeled and chopped

1 cup frozen green peas

1 small onion, finely chopped

2 cloves garlic, minced

1 1/2 cups beef broth

1 tbsp tomato paste

1/2 tsp smoked paprika

1/2 tsp dried thyme

2 tbsp all-purpose flour

2 tbsp butter

Salt and black pepper, to taste

Optional garnish: fresh thyme or parsley


Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a skillet, melt butter and sauté onion for 3 minutes. Add garlic and cook 30 seconds.
  3. Add ground beef. Brown thoroughly and season with salt, pepper, paprika, and thyme. Mix in tomato paste.
  4. Stir in flour, then gradually add beef broth. Simmer until thickened.
  5. Fold in potatoes, carrots, and peas. Mix to coat evenly.
  6. Transfer mixture to a greased 9×13” baking dish. Cover with foil.
  7. Bake for 35-40 minutes. Remove foil and bake another 10 minutes to brown top.
  8. Garnish and serve warm.
