Ingredients
1 lb ground beef
3 cups diced potatoes (peeled)
2 medium carrots, peeled and chopped
1 cup frozen green peas
1 small onion, finely chopped
2 cloves garlic, minced
1 1/2 cups beef broth
1 tbsp tomato paste
1/2 tsp smoked paprika
1/2 tsp dried thyme
2 tbsp all-purpose flour
2 tbsp butter
Salt and black pepper, to taste
Optional garnish: fresh thyme or parsley
Instructions
- Preheat oven to 375°F (190°C).
- In a skillet, melt butter and sauté onion for 3 minutes. Add garlic and cook 30 seconds.
- Add ground beef. Brown thoroughly and season with salt, pepper, paprika, and thyme. Mix in tomato paste.
- Stir in flour, then gradually add beef broth. Simmer until thickened.
- Fold in potatoes, carrots, and peas. Mix to coat evenly.
- Transfer mixture to a greased 9×13” baking dish. Cover with foil.
- Bake for 35-40 minutes. Remove foil and bake another 10 minutes to brown top.
- Garnish and serve warm.
