Whether you’re looking for a quick dinner, easy casserole recipe, or hearty food ideas for meal prep, this dish is a must-try. Great for busy weeknights or lazy Sundays, and perfect for feeding the whole family. Plus, it freezes and reheats beautifully.

Ingredients

2 cups cooked chicken, diced

3 cups cooked long-grain white rice

1 can (10.5 oz) cream of chicken soup

1 cup sour cream

1 cup chicken broth

1 ½ cups shredded cheddar cheese

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon salt

¼ teaspoon black pepper

2 tablespoons fresh parsley, chopped (optional)

Instructions

1. Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.

2. In a large bowl, mix together cream of chicken soup, sour cream, chicken broth, garlic powder, onion powder, salt, and pepper until smooth.

3. Add in the cooked rice and diced chicken. Mix until fully combined.

4. Pour the mixture into the prepared baking dish and spread it out evenly.

5. Top with shredded cheddar cheese.

6. Bake uncovered for 25–30 minutes until hot and bubbly, and the cheese is golden.

7. Garnish with chopped parsley before serving, if desired.

8. Serve hot and enjoy!

Notes

Rotisserie chicken works great to save time.

For extra richness, use full-fat sour cream and sharp cheddar cheese.
