1 pound andouille sausage, sliced
1 pound boneless skinless chicken thighs
1 pound shrimp, peeled and deveined
1 cup okra, sliced
1 green bell pepper, diced
1 onion, chopped
2 stalks celery, chopped
½ cup all-purpose flour
½ cup vegetable oil
3 cloves garlic, minced
2 tablespoons Cajun seasoning
6 cups chicken broth
2 bay leaves
1 teaspoon dried thyme
Salt and pepper to taste
Cooked white rice, for serving
Chopped green onions, for garnish
Instructions
1. Heat oil in a large pot and whisk in flour to make a roux. Stir constantly over medium-low heat until it turns a dark brown (about 25 minutes).
2. Add bell pepper, onion, and celery to the roux. Cook until soft, about 5–7 minutes.
3. In a separate skillet, brown the sausage and sear the chicken. Add both to the pot.
4. Stir in garlic, Cajun seasoning, bay leaves, thyme, and chicken broth. Add okra. Simmer covered for 45 minutes.
5. Add shrimp and cook for another 10 minutes until shrimp is pink and cooked through.
6. Remove bay leaves, taste, and adjust seasoning. Serve hot over white rice, garnished with green onions.
