Ingredients
1 lb beef sirloin or tenderloin, thinly sliced
1 tbsp olive oil
2 tbsp unsalted butter
1 medium onion, thinly sliced
3 cloves garlic, minced
8 oz cremini or button mushrooms, sliced
1 tbsp all-purpose flour
1 cup beef broth
1 tbsp Dijon mustard
1 tbsp Worcestershire sauce
3/4 cup sour cream
Salt and pepper, to taste
2 tbsp fresh parsley, chopped (for garnish)
Instructions
1. Heat oil in a large skillet over medium-high heat. Sear the beef strips until browned. Remove and set aside.
2. In the same skillet, melt butter. Add onions and mushrooms. Cook until golden, about 5-7 minutes. Add garlic in the last minute.
3. Sprinkle in flour and stir to coat vegetables. Slowly pour in beef broth, stirring constantly. Add mustard and Worcestershire sauce. Simmer until thickened.
4. Remove from heat. Stir in sour cream until smooth. Return beef to the skillet and heat through for 2-3 minutes.
