Ingredients
4 boneless skinless chicken breasts
1 cup plain Greek yogurt
1 tablespoon olive oil
2 tablespoons lemon juice
4 cloves garlic, minced
1 teaspoon dried oregano
1 teaspoon paprika
1 teaspoon salt
1/2 teaspoon black pepper
1 tablespoon chopped fresh parsley
Instructions
1. Preheat the oven to 400°F and lightly grease a baking dish.
2. In a medium bowl, mix the Greek yogurt, olive oil, lemon juice, garlic, oregano, paprika, salt, and black pepper until smooth.
3. Pat the chicken breasts dry with paper towels.
4. Coat the chicken thoroughly in the yogurt mixture.
5. Cover and refrigerate for at least 30 minutes, or up to 4 hours for deeper flavor.
6. Arrange the marinated chicken in the prepared baking dish in a single layer.
7. Bake for 22 to 28 minutes, or until the chicken reaches an internal temperature of 165°F.
8. Let the chicken rest for 5 minutes.
9. Sprinkle with fresh parsley and serve warm.
Notes
Avoid overbaking the chicken, because the breasts can dry out quickly once they pass 165°F, even with the yogurt marinade.
