Ingredients

4 salmon fillets (6 oz each)

Salt and black pepper to taste

2 tbsp olive oil

3 tbsp unsalted butter

3 garlic cloves, minced

1 cup heavy cream

1/2 cup chicken broth or white wine

2 tbsp lemon juice

1 tsp lemon zest

1 tbsp Dijon mustard

1 tbsp fresh parsley (chopped), plus extra for garnish

Optional: lemon slices for serving


Instructions

  1. Preheat oven to 375°F (190°C).
  2. Pat salmon dry and season with salt and pepper.
  3. Heat olive oil in an oven-safe skillet over medium-high heat.
  4. Sear salmon fillets skin-side down for 3 minutes, then flip and sear 1 more minute.
  5. In a separate pan, melt butter and sauté garlic until fragrant.
  6. Stir in broth or wine, and simmer for 2 minutes.
  7. Reduce heat and add cream, lemon juice, lemon zest, and Dijon mustard. Simmer for 3-4 minutes.
  8. Add chopped parsley, season to taste.
  9. Pour sauce over seared salmon and bake for 10-12 minutes.
  10. Garnish with parsley and lemon slices before serving.
