Description

Golden on the outside and tender on the inside, these Baked Sweet Potato Zucchini Tots are a wholesome, oven-baked snack or side dish. Made with real vegetables, simple ingredients, and baked instead of fried, they’re perfect for quick dinners, healthy snacks, and family-friendly food ideas.


Ingredients

2 cups mashed sweet potato

1 cup grated zucchini, moisture squeezed out

1 cup breadcrumbs

1 large egg

1 cup shredded cheddar cheese

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon salt

¼ teaspoon black pepper

1 tablespoon olive oil spray or brushing


Instructions

1. Preheat the oven to 400°F and line a baking sheet with parchment paper

2. Squeeze excess moisture from the grated zucchini using a towel

3. Mix sweet potato, zucchini, breadcrumbs, egg, cheese, and seasonings in a bowl

4. Shape the mixture into small tot-sized cylinders

5. Arrange on the baking sheet and lightly coat with olive oil

6. Bake for 15 minutes, flip, then bake another 10–15 minutes until golden

Notes

Reheat leftovers in the oven or air fryer for best texture
