Ingredients
1.5 lbs salmon, cut into 1- to 2-inch chunks
1/3 cup mayonnaise
2 tablespoons sriracha sauce
1 tablespoon sweet chili sauce or honey
1/2 teaspoon garlic powder
1/4 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon olive oil
1 tablespoon chopped fresh parsley or chives (optional, for garnish)
Instructions
1. Preheat oven to 400°F (200°C). Line a baking dish or tray with parchment paper or lightly grease it.
2. Cut salmon into chunks and pat dry with paper towels. Place in a mixing bowl.
3. In a separate bowl, whisk together mayonnaise, sriracha, sweet chili sauce (or honey), garlic powder, salt, and pepper.
4. Pour half the sauce over the salmon and gently toss to coat. Reserve the remaining sauce.
5. Arrange the salmon pieces in the baking dish. Drizzle lightly with olive oil.
6. Bake for 12-15 minutes or until salmon is cooked through and begins to caramelize.
7. For crispy tops, broil on high for 1-2 minutes at the end.
8. Drizzle with remaining bang bang sauce and sprinkle with fresh herbs. Serve immediately.
Notes
For a healthier version, swap mayonnaise with Greek yogurt.
Don’t skip patting the salmon dry—it helps the sauce stick better and ensures caramelization.
