Ingredients
12 oz bowtie (farfalle) pasta
1 lb ground beef (85-90% lean)
1 tbsp olive oil (or 1 tbsp butter)
1 small yellow onion, finely chopped
3 cloves garlic, minced
2 cups Alfredo sauce (homemade or jarred)
1/2 cup freshly grated Parmesan cheese
2 tbsp chopped fresh parsley
1/2 tsp kosher salt, plus more for pasta water
1/2 tsp black pepper
1/4 tsp red pepper flakes (optional)
1/2 cup reserved pasta cooking water, as needed
Instructions
1. Bring a large pot of well-salted water to a boil. Add bowties and cook until al dente according to package directions. Reserve 1/2 cup cooking water; drain pasta.
2. Heat olive oil in a large skillet over medium. Add ground beef and cook, breaking it up, until browned and no longer pink. Drain excess fat if needed.
3. Add onion to the skillet; cook 3-4 minutes until softened. Stir in garlic and cook 30 seconds until fragrant.
4. Pour in Alfredo sauce; stir to combine. Season with salt, pepper, and red pepper flakes (if using). If the sauce seems thick, splash in a little reserved pasta water.
5. Add drained bowties to the skillet. Toss until every piece is coated and glossy, loosening with more pasta water as needed.
6. Off heat, stir in Parmesan. Garnish with parsley and serve hot.
Notes
For extra richness, use a mix of heavy cream and Parmesan to boost a jarred Alfredo.
Stir in steamed broccoli or peas at the end for an easy veggie add-in.
