Ingredients
450g ground beef
250g cheese tortellini
1 can (15 oz) enchilada sauce
1 can (14.5 oz) diced tomatoes
1 small onion, diced
2 cloves garlic, minced
1 teaspoon cumin
1 teaspoon chili powder
1 cup shredded cheese
1/2 cup sour cream
2 tablespoons chopped cilantro or parsley (optional)
Instructions
1. Brown the ground beef in a large skillet over medium heat, breaking it up as it cooks. Drain excess grease.
2. Add diced onion and minced garlic; cook for 3–4 minutes until fragrant.
3. Stir in enchilada sauce, diced tomatoes, cumin, and chili powder. Let simmer for 5 minutes.
4. Gently add tortellini to the skillet. Cover and cook on low for 7–9 minutes (or longer if using frozen tortellini). Stir occasionally.
5. Sprinkle shredded cheese over the mixture. Cover for 1–2 minutes until cheese is melted.
6. Remove from heat and top with sour cream and chopped herbs if using. Serve warm.
Notes
If using frozen tortellini, increase cooking time by 2–3 minutes and check for doneness before serving.
For extra kick, stir in diced green chiles or a splash of hot sauce.
