2 lbs beef chuck roast, cut into chunks

2 tbsp olive oil

1 tbsp butter

2 large yellow onions, sliced

3 garlic cloves, minced

2 tbsp tomato paste

3 cups beef broth

1 tbsp Worcestershire sauce

1 bay leaf

1 tsp dried thyme

2 lbs Yukon Gold potatoes, thinly sliced

1 tbsp melted butter (for brushing)

1 tsp salt

1/2 tsp black pepper


Instructions

1. Heat olive oil in a Dutch oven. Season beef with salt and pepper and sear in batches until browned. Remove and set aside.

2. Add onions and butter to the same pan. Cook until softened, then stir in garlic and tomato paste until fragrant.

3. Return beef to the pot. Pour in beef broth, Worcestershire sauce, thyme, and bay leaf. Cover and simmer for 1.5–2 hours, until beef is fork-tender.

4. Preheat oven to 375°F (190°C). Arrange sliced potatoes in a circular pattern over the stew. Brush with melted butter, season with salt.

5. Bake uncovered for 30–40 minutes, until potatoes are golden. Broil for 3–5 minutes for crispiness if desired.
