Ingredients

1 lb beef sirloin, thinly sliced

1 tbsp olive oil

2 tbsp butter

1 medium onion, diced

2 cloves garlic, minced

8 oz mushrooms, sliced

2 tbsp all-purpose flour

1 1/2 cups beef broth

1 tsp Dijon mustard

3/4 cup sour cream

Salt and black pepper, to taste

2 tbsp chopped fresh parsley


Instructions

1. Heat olive oil in a skillet over medium-high heat and sear beef until browned. Remove and set aside.

2. In the same pan, melt butter and cook onions and mushrooms until soft. Add garlic and cook 1 minute.

3. Sprinkle in flour and stir well. Gradually add beef broth while stirring to avoid lumps.

4. Stir in Dijon mustard and simmer until slightly thickened.

5. Reduce heat to low, add sour cream, and stir until smooth.

6. Return beef to the skillet and let simmer for a few minutes.

7. Season with salt and pepper.

8. Garnish with parsley and serve hot over noodles, rice, or potatoes.

Notes
