If you are looking for breakfast ideas, food ideas, or an easy muffin recipe that feels cozy and satisfying, these fluffy banana muffins are a delicious choice.

Ingredients

2 cups all-purpose flour

1 teaspoon baking soda

1 teaspoon baking powder

1/2 teaspoon salt

1 teaspoon ground cinnamon

3 ripe bananas, mashed

1/2 cup plain Greek yogurt

1/2 cup unsalted butter, melted

3/4 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

Instructions

1. Preheat the oven to 375°F and line a 12-cup muffin pan with paper liners.

2. In a medium bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon.

3. In a large bowl, mash the bananas until mostly smooth.

4. Add the Greek yogurt, melted butter, sugar, eggs, and vanilla extract to the bananas and stir until well combined.

5. Add the dry ingredients to the wet ingredients and gently fold until just combined. Do not overmix.

6. Divide the batter evenly among the muffin cups, filling each about 3/4 full.

7. Bake for 18 to 22 minutes, or until the tops are golden and a toothpick inserted into the center comes out clean.

8. Let the muffins cool in the pan for 5 minutes, then transfer them to a wire rack to cool completely.

Notes

Do not overmix the batter once the flour is added, or the muffins can turn dense instead of soft and fluffy.
