Ingredients

80 oz ground beef (80/20)

8 slices American cheese

8 flour tortillas (small size)

1 cup shredded lettuce

1/2 cup dill pickle chips

1/2 cup mayonnaise

2 tablespoons ketchup

1 tablespoon sweet relish

1/4 teaspoon onion powder

Salt and pepper to taste


Instructions

1. In a small bowl, mix together mayonnaise, ketchup, relish, and onion powder to make the burger sauce. Set aside.

2. Divide the ground beef into 2 oz portions and gently form them into balls.

3. Heat a skillet or griddle over high heat. Place tortillas on the pan and warm each side until lightly toasted. Keep warm.

4. Place beef balls directly on the hot skillet. Smash flat with a heavy spatula. Season with salt and pepper.

5. Let patties cook for 2–3 minutes until the edges crisp, then flip and immediately top with a slice of American cheese.

6. Once the cheese melts, remove patties from the heat.

7. To assemble: place one cheesy patty on each tortilla, top with shredded lettuce, pickles, and a generous drizzle of burger sauce.

8. Serve immediately while hot.

Notes

Use a metal spatula with a flat edge to really smash the patties and create those crispy, lacy edges.

For a spicy kick, add chopped jalapeños or swap in spicy pickles or chipotle mayo.
