Ingredients

1 can (15 oz) black beans, drained and rinsed

2 large eggs

1/2 cup unsweetened cocoa powder

3/4 cup coconut sugar or brown sugar

1/4 cup coconut oil or melted butter

1 tsp vanilla extract

1/2 tsp baking powder

1/4 tsp salt

1/2 cup dark chocolate chips (plus extra for topping)

Optional: 1–2 tbsp brewed coffee or espresso


Instructions

  1. Preheat oven to 350°F (175°C). Line or grease an 8×8-inch baking pan.
  2. In a food processor, blend black beans, eggs, cocoa powder, sugar, oil, vanilla, baking powder, and salt until completely smooth.
  3. Transfer to a bowl and fold in chocolate chips and optional coffee.
  4. Pour batter into pan and smooth the top. Sprinkle extra chips over.
  5. Bake 25–30 minutes, or until the top is set and a toothpick comes out with moist crumbs.
  6. Cool in the pan for 10–15 minutes, then lift out and cool completely before slicing.
