Ingredients

1 lb flank steak or sirloin, thinly sliced against the grain

1 tablespoon cornstarch

1 tablespoon soy sauce

1 tablespoon oyster sauce

1 tablespoon dark soy sauce (optional)

1 tablespoon Shaoxing wine (or dry sherry)

2 teaspoons freshly ground black pepper

1 teaspoon sugar

1 medium onion, chopped into chunks

1 red bell pepper, sliced

2 tablespoons vegetable oil

23 garlic cloves, minced

1 teaspoon ginger, minced

Cooked white rice for serving

Instructions

  1. Marinate the Beef: In a bowl, mix beef with soy sauce, cornstarch, and Shaoxing wine. Let sit for 15 minutes.
  2. Prepare the Sauce: In a separate bowl, whisk oyster sauce, dark soy sauce, black pepper, and sugar. Set aside.
  3. Stir-Fry the Vegetables: Heat 1 tbsp oil in a wok or skillet. Cook onions and bell pepper for 2–3 minutes. Remove and set aside.
  4. Sear the Beef: Add remaining oil to the pan. Sear beef in a single layer for 1–2 minutes without moving, then stir-fry for another 1–2 minutes.
  5. Add Aromatics and Sauce: Add garlic and ginger, cook 30 seconds. Return veggies and pour in the sauce. Stir to coat.
  6. Serve: Dish over warm rice and enjoy immediately.
