Ingredients

150g red velvet cookies or wafers

60g unsalted butter, melted

500g cream cheese

150g granulated sugar

1 teaspoon vanilla extract

3 large eggs

200ml heavy cream

2 teaspoons gelatin powder

200g fresh or frozen blackberries

1 tablespoon lemon juice


Instructions

1. Pulse red velvet cookies into fine crumbs and mix with melted butter. Press into a springform pan and bake at 325°F (160°C) for 8 minutes. Let cool.

2. Beat cream cheese and sugar until smooth. Add eggs one at a time, then mix in vanilla. Pour over crust and bake at 300°F (150°C) in a water bath for 50 minutes. Cool completely.

3. Puree blackberries and strain to remove seeds. Heat with sugar and lemon juice. Bloom gelatin in cold water, then stir into the warm blackberry mixture. Let cool slightly.

4. Whip heavy cream to stiff peaks. Fold into cooled blackberry mixture. Spread over cheesecake.

5. Chill the entire cheesecake for at least 4 hours or overnight.

6. Top with whipped cream swirls and fresh blackberries before serving.
