Ingredients
12 jalapeños, halved lengthwise and seeded
4 ounces brie, rind trimmed and chopped
4 ounces cream cheese, softened
1 cup fresh blueberries
3/4 cup panko breadcrumbs
1/4 cup grated Parmesan cheese
1 tablespoon olive oil
1/2 teaspoon garlic powder
1/4 teaspoon kosher salt
1/4 teaspoon black pepper
1 tablespoon chopped fresh parsley
Instructions
1. Preheat the oven to 400°F and line a baking sheet with parchment paper.
2. Slice the jalapeños in half lengthwise and remove the seeds and membranes. Arrange them cut side up on the baking sheet.
3. In a medium bowl, mix the chopped brie, softened cream cheese, garlic powder, salt, and black pepper until creamy.
4. Spoon the cheese mixture evenly into each jalapeño half.
5. Press 2 to 3 blueberries gently into the filling of each popper.
6. In a small bowl, stir together the panko, Parmesan, and olive oil.
7. Sprinkle the breadcrumb mixture over the tops of the filled jalapeños.
8. Bake for 18 to 22 minutes, until the peppers are tender, the filling is hot, and the tops are golden brown.
