Ingredients
2 cups milk
1 cup blueberries
1/4 cup chia seeds
1/2 cup Greek yogurt
2 tablespoons maple syrup
1 teaspoon vanilla extract
1/2 cup blueberries for topping
1/4 cup granola for topping
Instructions
1. Add 1 cup blueberries, milk, Greek yogurt, maple syrup, and vanilla extract to a blender and blend until smooth.
2. Pour the mixture into a bowl or large jar.
3. Stir in the chia seeds until fully combined.
4. Let the mixture sit for 5 minutes, then stir again to prevent clumping.
5. Cover and refrigerate for at least 4 hours or overnight until thickened.
6. Stir the pudding before serving and add a splash of milk if you want a thinner texture.
7. Divide into 4 servings and top with the remaining blueberries and granola.
Notes
Do not skip the second stir after the first 5 minutes, or the chia seeds can settle into clumps instead of setting into a smooth pudding.
