Ingredients

8 oz cream cheese, softened

1/3 cup powdered sugar

1 tsp vanilla extract

1 cup blueberry pie filling (or fresh blueberries cooked with sugar and cornstarch)

10 egg roll wrappers

1 egg, beaten (for sealing)

Vegetable oil, for frying

Optional: powdered sugar, whipped cream, or white chocolate drizzle for topping


Instructions

  1. In a bowl, beat cream cheese until smooth. Add powdered sugar and vanilla, mixing until creamy.
  2. Lay an egg roll wrapper like a diamond. Add 1 tbsp cream cheese mix and 1 tbsp blueberry filling.
  3. Fold bottom over filling, tuck in sides, brush top edge with egg, and roll tightly.
  4. Heat oil in a deep pan to 350°F (175°C).
  5. Fry 2-3 rolls at a time until golden, about 2-3 minutes per side.
  6. Drain on paper towels, cool slightly, and top with optional garnish before serving.
