Ingredients
450g boneless skinless chicken breasts
80ml soy sauce
60g brown sugar
60ml bourbon
2 cloves garlic minced
1 tsp fresh grated ginger
1 tbsp apple cider vinegar
1 tbsp cornstarch
2 tbsp water (to mix with cornstarch)
6–8 wooden skewers soaked in water
Instructions
1. Cut chicken into bite-sized chunks.
2. In a bowl, mix soy sauce, brown sugar, bourbon, garlic, ginger, and vinegar.
3. Add chicken to marinade. Cover and refrigerate for at least 1 hour.
4. Thread marinated chicken onto pre-soaked wooden skewers.
5. Pour leftover marinade into a saucepan, bring to simmer.
6. Stir in cornstarch mixed with water to thicken glaze.
7. Preheat grill to medium-high heat.
8. Grill skewers for 10–12 minutes, turning and brushing with glaze.
9. Serve hot with extra glaze on the side.
Notes
Soak the wooden skewers in water for at least 30 minutes before grilling to prevent burning.
For a non-alcoholic version, substitute the bourbon with apple juice and a splash of apple cider vinegar.
