Ingredients
113g unsalted butter
150g brown sugar
50g granulated sugar
1 large egg
1 egg yolk
1 ½ tsp vanilla extract
180g all-purpose flour
½ tsp baking soda
½ tsp salt
100g chopped semi-sweet or dark chocolate
70g toffee bits
Flaky sea salt (optional, for sprinkling)
Instructions
1. Melt butter over medium heat and cook until golden brown with a nutty aroma. Remove and let cool slightly.
2. In a bowl, mix browned butter with both sugars until smooth. Add egg, yolk, and vanilla.
3. In another bowl, whisk flour, baking soda, and salt. Add to wet ingredients and stir just until combined.
4. Fold in chopped chocolate and toffee bits.
5. Chill dough for at least 30 minutes.
6. Preheat oven to 350°F (175°C). Scoop dough onto lined baking sheets.
7. Bake 10–12 minutes or until edges are golden and centers slightly underdone.
8. Cool for 5 minutes on tray, then move to wire rack. Sprinkle flaky salt while warm, if using.
Notes
Don’t skip the chilling step—it helps prevent the cookies from spreading too much.
For extra gooey centers, slightly underbake and let them finish cooking on the sheet.
