Ingredients
2 tablespoons butter
1 medium onion, diced
3 cloves garlic, minced
2 cups shredded cooked chicken
3 cups crushed tomatoes
1 cup barbecue sauce
3 cups chicken broth
1 ½ cups corn kernels (fresh, frozen, or canned)
1 ½ cups lima beans (frozen or canned)
2 medium potatoes, diced
1 teaspoon salt
½ teaspoon black pepper
Optional: hot sauce, to taste
Instructions
1. In a large pot or Dutch oven, melt the butter over medium heat.
2. Add the diced onion and sauté for about 5 minutes until softened.
3. Stir in the minced garlic and cook for 1 more minute.
4. Pour in crushed tomatoes, barbecue sauce, and chicken broth. Stir well.
5. Add shredded chicken, corn, lima beans, and potatoes to the pot.
6. Season with salt and pepper.
7. Bring the mixture to a simmer.
8. Cover and cook on low for 30–45 minutes, until potatoes are tender.
9. Taste and adjust seasoning. Add hot sauce if desired.
10. Let stew rest 10 minutes before serving.
