It combines layers of shredded buffalo chicken, creamy ricotta cheese, gooey mozzarella, and ranch-infused sauce, all nestled between tender lasagna noodles. Ingredients
For the Chicken Filling:
3 cups cooked and shredded chicken (rotisserie or boiled)
1 cup buffalo sauce (adjust to taste)
1 teaspoon garlic powder
1 teaspoon onion powder
½ teaspoon smoked paprika
For the Ricotta Mixture:
1 ½ cups ricotta cheese
1 egg
½ teaspoon salt
½ teaspoon black pepper
½ teaspoon dried Italian seasoning
For the Lasagna Layers:
12 lasagna noodles, cooked al dente
2 cups shredded mozzarella cheese
1 cup shredded cheddar cheese
½ cup crumbled blue cheese (optional)
For the Sauce:
1 ½ cups ranch dressing (or blue cheese dressing)
½ cup heavy cream
For Garnish (Optional):
Fresh chopped parsley or green onions
Extra buffalo sauce drizzle
Instructions
- Prepare the Chicken Filling – In a large bowl, mix the shredded chicken with buffalo sauce, garlic powder, onion powder, and smoked paprika until evenly coated. Set aside.
- Cook the Lasagna Noodles – Boil according to package instructions until al dente. Drain and lay flat to prevent sticking.
- Make the Ricotta Mixture – In a separate bowl, mix ricotta cheese, egg, salt, black pepper, and Italian seasoning until smooth.
- Prepare the Sauce – Whisk together the ranch dressing and heavy cream in another bowl.
- Assemble the Lasagna:
- Preheat oven to 375°F (190°C).
- Spread a thin layer of ranch-cream sauce at the bottom of a 9×13-inch baking dish.
- Layer 3 lasagna noodles over the sauce.
- Spread buffalo chicken mixture, then add dollops of ricotta and a sprinkle of mozzarella, cheddar, and blue cheese.
- Repeat layers until ingredients are used, finishing with cheese on top.
- Bake the Lasagna:
- Cover with foil and bake for 25 minutes.
- Remove foil and bake another 10–15 minutes until the cheese is melted and golden brown.
- Rest & Serve – Let the lasagna sit for at least 10 minutes before slicing. Garnish with parsley or green onions and drizzle with extra buffalo sauce if desired.
