500g chicken thighs

120g Greek yogurt

2 tsp garam masala

300ml tomato puree

200ml heavy cream

2 tbsp butter (for sauce)

1 tbsp chopped fresh cilantro (optional)


Instructions

1. In a mixing bowl, combine Greek yogurt, garam masala, smoked paprika, garlic, ginger, and lime juice. Add chicken and marinate for 30 minutes or overnight.

2. Heat 2 tablespoons of butter in a large skillet over medium heat. Sear marinated chicken on both sides until browned. Remove and set aside.

3. In the same skillet, melt another 2 tablespoons of butter. Sauté garlic and ginger until fragrant.

4. Stir in the tomato puree and simmer for 10 minutes until slightly thickened.

5. Pour in heavy cream and mix well. Let the sauce gently simmer.

6. Return seared chicken to the skillet, coating it in the sauce. Let simmer for 10 minutes.

7. Add a final pat of butter and garnish with cilantro if using. Serve hot.

Notes
