2 teaspoons vanilla extract (divided)
1 cup all-purpose flour
1/2 cup cocoa powder
1/2 teaspoon salt
1 cup chopped pecans
3/4 cup corn syrup
Instructions
1. Preheat oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper.
2. In a large bowl, melt butter and stir in granulated sugar and 1/2 cup brown sugar until smooth.
3. Beat in 2 eggs and 1 teaspoon vanilla extract.
4. Sift in flour, cocoa powder, and salt. Stir until just combined.
5. Pour the brownie batter into the prepared pan and spread evenly.
6. Bake for 20 minutes until the base is mostly set but not fully baked.
7. In a saucepan over medium heat, combine remaining 1/2 cup brown sugar, corn syrup, 1 egg, and a pinch of salt. Stir constantly until slightly thickened.
8. Remove from heat and stir in 1 teaspoon vanilla extract and chopped pecans.
9. Gently pour the pecan topping over the partially baked brownie layer and spread evenly.
10. Return to the oven and bake for another 20–25 minutes until topping is set and bubbly.
11. Let cool completely before slicing. For clean cuts, chill and use a sharp warm knife.
Notes
These brownies slice best when fully cooled or chilled.
