1 lb chicken breast, diced

2 tbsp Cajun seasoning

12 oz elbow macaroni or cavatappi

2 tbsp butter

2 tbsp all-purpose flour

1 ½ cups whole milk

1 cup heavy cream

1 ½ cups sharp cheddar cheese, shredded

1 cup mozzarella cheese, shredded

½ cup Parmesan cheese, grated

½ tsp salt

¼ tsp black pepper

1 tbsp chopped fresh parsley or chives (optional)


Instructions

1. Cook pasta in salted water until al dente. Drain and set aside.

2. Season diced chicken with Cajun seasoning. Sear in a skillet with oil until cooked through. Set aside.

3. In the same skillet, melt butter and whisk in flour to make a roux. Slowly add milk and cream while whisking until thickened.

4. Stir in cheddar, mozzarella, and Parmesan cheeses until smooth.
