Ingredients
2 medium chicken breasts or thighs
200 g spaghetti
1 cup shredded mozzarella cheese
3/4 cup heavy cream
3 cloves garlic, minced
2 tbsp butter
1 tbsp olive oil
1 tbsp Cajun seasoning
1/2 tsp paprika
1 tbsp chopped fresh parsley
1/2 tsp salt
1/4 tsp ground black pepper
Instructions
1. Coat the chicken in Cajun seasoning, salt, and pepper.
2. Heat olive oil in a skillet over medium-high heat. Sear chicken until golden and cooked through, about 4–5 minutes per side. Set aside to rest.
3. Boil spaghetti in salted water until al dente. Reserve 1/2 cup pasta water, then drain.
4. Lower heat and melt butter in the same skillet. Sauté garlic until fragrant.
5. Stir in heavy cream and let it simmer. Add mozzarella and stir until melted.
6. Season with paprika, salt, and pepper. Add reserved pasta water if needed.
7. Toss cooked spaghetti into the sauce until coated.
8. Slice the rested chicken and place over pasta. Garnish with parsley and serve.
Notes
Thighs offer more flavor, but breasts work great for a leaner version.
Add a splash of milk or cream when reheating to keep it creamy.
