Ingredients
2 tablespoons olive oil
14 ounces smoked sausage, sliced
1 small red onion, chopped
2 cloves garlic, minced
1 cup long grain white rice
2 cups chicken broth
1 cup heavy cream
1 cup shredded cheddar cheese
1 tablespoon Cajun seasoning
Instructions
1. Heat olive oil in a large skillet over medium-high heat. Add sliced sausage and cook until browned, then remove and set aside.
2. In the same skillet, add chopped onion and minced garlic. Sauté until softened and fragrant.
3. Stir in the rice and toast lightly for 1–2 minutes. Pour in the chicken broth, bring to a boil, then cover and reduce heat. Simmer until rice is tender.
