Ingredients

2 cups graham cracker crumbs

1/2 cup unsalted butter, melted

1/4 cup granulated sugar

16 oz cream cheese, softened

2 large eggs

1/2 cup granulated sugar

1 teaspoon vanilla extract

2 medium apples, peeled and diced

1/3 cup brown sugar

1 teaspoon ground cinnamon

1/2 cup all-purpose flour

1/2 cup rolled oats

1/3 cup brown sugar

1/4 teaspoon salt

1/3 cup unsalted butter, melted

1/3 cup caramel sauce, for drizzling

Instructions

1. Preheat oven to 350°F. Line a 9×13-inch baking pan with parchment paper.

2. Mix graham cracker crumbs, melted butter, and sugar until combined. Press into the pan and bake for 8–10 minutes. Let cool.

3. In a bowl, beat cream cheese until smooth. Add sugar, eggs, and vanilla. Mix until creamy. Spread over crust.

4. Toss diced apples with brown sugar and cinnamon. Gently spread over cheesecake layer.

5. In a separate bowl, combine flour, oats, brown sugar, and salt. Add melted butter and mix until crumbly. Sprinkle on top.

6. Bake for 40–45 minutes, until center is set. Let cool, then refrigerate for 3+ hours or overnight.

7. Slice into bars and drizzle with caramel before serving.

Notes

Chill the bars overnight for cleaner slices and better texture.

Swap caramel sauce with maple syrup for a fall-inspired twist.
