Ingredients

34 lb chuck roast

3 large yellow onions, thinly sliced

4 cloves garlic, minced

2 cups beef broth

1 cup red wine (optional)

2 tbsp Worcestershire sauce

2 tbsp butter

2 tbsp olive oil

1 tsp salt

1/2 tsp black pepper

3 sprigs fresh thyme

2 bay leaves


Instructions

1. Season the chuck roast with salt and pepper.

2. In a Dutch oven, heat olive oil and sear the roast on both sides until browned. Remove and set aside.

3. In the same pot, melt butter and add onions with a pinch of salt. Cook slowly for about 30 minutes until golden.

4. Add garlic and cook for 2 more minutes.

5. Deglaze with wine (if using), scraping up the browned bits. Simmer until reduced.

6. Add beef broth, Worcestershire, thyme, and bay leaves.

7. Return roast to pot. Cover and cook at 325°F for 3–3.5 hours, until fork-tender.

8. Remove thyme and bay leaves. Slice or shred the roast and serve with the onion gravy.
