1/4 cup brown sugar

Instructions

1. Line a 10×15 jelly roll pan with parchment paper and lightly grease it. Preheat oven to 350°F (175°C).

2. In a bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.

3. In another bowl, beat eggs with granulated and brown sugar until pale and thick. Stir in vanilla extract.

4. Fold in dry ingredients and grated carrots until just combined.

5. Spread batter into prepared pan and bake for 10–12 minutes, or until cake springs back when lightly pressed.

6. Invert the cake onto a powdered sugar-dusted towel. Peel off parchment. Roll the cake up in the towel and let cool.
