1 medium spaghetti squash

1 tablespoon olive oil

1 teaspoon salt

1/2 teaspoon black pepper

1/2 pound ground beef or turkey

1 small onion, chopped

3 cloves garlic, minced

1 1/2 cups crushed tomatoes

1 teaspoon Italian seasoning

1 cup shredded mozzarella cheese

1/4 cup grated parmesan cheese


Instructions

1. Preheat the oven to 400°F. Cut spaghetti squash in half lengthwise and scoop out seeds.

2. Drizzle each half with olive oil and season with salt and pepper. Place cut-side down on a baking sheet. Roast for 35–40 minutes or until tender.

3. Meanwhile, heat olive oil in a skillet over medium heat. Add chopped onion and garlic. Cook until softened.

4. Add ground beef or turkey and cook until browned, breaking it apart with a spatula.

5. Stir in crushed tomatoes, Italian seasoning, salt, and pepper. Simmer sauce for 15–20 minutes until thickened.

6. Remove squash from oven. Let cool slightly, then fluff the interior with a fork to form strands.

7. Spoon meat sauce into each squash half. Top with mozzarella and parmesan cheese.

8. Lower oven temperature to 375°F. Bake stuffed squash for 10–15 minutes until cheese is melted and golden.
