Ingredients

12 oz rigatoni pasta

1.25 lbs sirloin or ribeye steak, cubed

3 tablespoons butter

4 cloves garlic, minced

1 cup shredded mozzarella cheese

1/2 cup grated parmesan cheese

1/2 cup shredded fontina cheese

4 oz cream cheese

1 cup heavy cream

1 teaspoon salt

1/2 teaspoon black pepper

2 tablespoons chopped fresh parsley (optional)

1/2 cup reserved pasta water


Instructions

1. Cook rigatoni in salted boiling water until al dente. Drain and reserve 1/2 cup of pasta water.

2. Season steak cubes with salt and pepper. In a skillet over medium-high heat, melt butter and sauté garlic.

3. Add steak and sear until browned and cooked to preferred doneness. Remove and keep warm.

4. In the same skillet, add heavy cream and cream cheese. Stir until smooth.

5. Add mozzarella, parmesan, and fontina. Stir until sauce is melted and creamy.

6. Toss cooked pasta into sauce, adding reserved pasta water to loosen as needed.

7. Serve pasta topped with garlic butter steak and sprinkle with parsley.

Notes

For a deeper sear, pat steak dry before cooking.

You can swap fontina with gouda or provolone if preferred.
