Ingredients
1 lb ground beef
1 packet taco seasoning
1⁄4 cup water
2 cups shredded cheddar cheese
6 large flour tortillas
1 tablespoon butter or oil
1⁄4 cup diced onion (optional)
Instructions
1. In a large skillet over medium heat, cook ground beef until browned, breaking it apart as it cooks. Drain excess fat.
2. Stir in taco seasoning and water. Simmer for 3–5 minutes until mixture thickens.
3. On one half of each tortilla, layer shredded cheese, a scoop of beef mixture, and more cheese. Fold tortilla in half.
4. Heat butter or oil in a skillet over medium heat. Toast each folded quesadilla for 2–3 minutes per side until golden and cheese is melted.
5. Remove from heat, let rest for 1 minute, slice into wedges, and serve hot.
Notes
For crispier quesadillas, use a cast iron pan and don’t overcrowd it.
You can freeze fully cooked quesadillas and reheat them directly in a hot skillet or oven.
