Ingredients
225g rotini pasta
450g ground beef
1 cup sweet corn (canned or frozen)
120ml ranch dressing
1 cup shredded cheddar cheese
1 cup shredded mozzarella cheese
115g cream cheese
1 tsp salt
0.5 tsp black pepper
Instructions
1. Boil a pot of salted water and cook the rotini until al dente. Drain and set aside.
2. In a skillet over medium heat, brown the ground beef until fully cooked. Drain excess fat.
3. Reduce heat to low, then stir in the cream cheese, ranch dressing, and half of both shredded cheeses. Mix until smooth and creamy.
4. Add in sweet corn and the cooked rotini. Stir until well combined and coated.
5. Transfer the mixture to a greased 9×13-inch baking dish. Top with remaining cheese.
6. Bake at 375°F (190°C) for 20–25 minutes or until cheese is golden and bubbly.
