Ingredients
12 oz rigatoni pasta
1.25 lb boneless skinless chicken breasts
1 cup grated parmesan cheese
1 cup shredded mozzarella cheese
1 cup heavy cream
2 tbsp butter
4 cloves garlic, minced
2 tbsp chopped fresh parsley
1 tbsp olive oil
0.5 tsp salt
0.25 tsp black pepper
Instructions
1. Cook rigatoni in salted boiling water until al dente. Drain and reserve 1/2 cup pasta water.
2. Season chicken with salt, pepper, and a little garlic. Heat olive oil in skillet. Sear chicken until golden and cooked through. Remove and slice.
3. In same pan, melt butter and sauté garlic until fragrant.
4. Add heavy cream, pasta water, parmesan, and mozzarella. Stir until smooth and melted.
5. Toss cooked rigatoni into sauce and simmer for 2–3 minutes.
6. Top pasta with sliced chicken and garnish with parsley.
7. Serve hot and enjoy!
Notes
For extra crispy edges on the chicken, broil it for 2 minutes after searing.
