Ingredients
2 boneless skinless chicken breasts
10 oz rotini pasta
2 garlic cloves, minced
0.5 tsp garlic powder
0.5 cup freshly grated Parmesan cheese
1 cup shredded mozzarella cheese
1 cup heavy cream
1 tbsp butter
1 tbsp olive oil
Salt and pepper to taste
1 tbsp chopped parsley
0.25 tsp crushed red pepper (optional)
Instructions
1. Season both sides of the chicken with salt, pepper, garlic powder, and crushed red pepper if using.
2. Heat olive oil in a skillet and sear chicken until golden and fully cooked. Set aside.
3. Cook rotini in salted water until al dente. Reserve 1/4 cup pasta water, then drain.
4. In the same skillet, melt butter and sauté minced garlic until fragrant.
5. Pour in heavy cream, then stir in Parmesan and mozzarella. Simmer until thickened.
6. Add rotini to the sauce and toss. Use pasta water to loosen if needed.
7. Slice chicken and layer on top of the cheesy pasta.
8. Garnish with chopped parsley and serve hot.
Notes
Use freshly grated cheese for the best melt and smooth sauce texture.
Stir the pasta gently into the sauce to avoid breaking the twists.
