Ingredients
8 oz rotini pasta
1 cup Velveeta cheese, cubed
1 cup shredded mozzarella cheese
1 cup heavy cream
2 cloves garlic, minced
1 lb chicken breast, grilled and sliced
2 tbsp butter
1 tsp salt
1/2 tsp black pepper
1 tbsp chopped parsley (optional, for garnish)
Instructions
1. Bring a large pot of salted water to a boil and cook rotini pasta until al dente. Drain and set aside.
2. Season chicken with salt and pepper. Sear in a hot skillet until golden brown and fully cooked. Set aside and slice.
3. In the same skillet, melt butter and sauté garlic until fragrant (about 30 seconds).
4. Pour in heavy cream and heat through. Add Velveeta and mozzarella. Stir until melted and smooth.
5. Add cooked pasta to the sauce and stir to coat well.
6. Plate pasta and top with grilled chicken. Garnish with parsley and serve hot.
Notes
For extra creaminess, stir in a splash of milk before serving if the sauce thickens too much while cooling.
Swap grilled chicken with rotisserie chicken to save even more time.
