Ingredients

For the Chocolate Crust:

1 1/2 cups chocolate cookie crumbs (such as Oreo or any chocolate wafer cookies)

1/4 cup unsalted butter, melted

2 tablespoons granulated sugar (optional, depending on the sweetness of your cookies)

For the Cheesecake Filling:

3 packages (8 oz each) cream cheese, softened

1 cup granulated sugar

1 teaspoon vanilla extract

3 large eggs, room temperature

1/2 cup sour cream

1/4 cup heavy cream

For the Cherry Topping:

2 cups fresh or frozen cherries, pitted

1/4 cup granulated sugar

1 tablespoon cornstarch

1 tablespoon lemon juice

1/4 cup water


Instructions

  • Prepare the Crust: Preheat your oven to 325°F (163°C). Pulse chocolate cookies in a food processor until finely ground. Mix crumbs with melted butter and sugar. Press the mixture into the bottom of a springform pan. Chill in the fridge.

  • Make the Cheesecake Filling: Beat softened cream cheese until smooth. Add sugar and vanilla, mixing until combined. Add eggs one at a time, then mix in sour cream and heavy cream. Pour the filling into the chilled crust.

  • Bake the Cheesecake: Bake for 50-60 minutes, or until the edges are set, and the center is slightly jiggly. Turn off the oven and let the cheesecake cool in the oven for an hour. Transfer to a wire rack and refrigerate for at least 4 hours or overnight.

  • Prepare the Cherry Topping: In a saucepan, combine cherries, sugar, cornstarch, lemon juice, and water. Cook over medium heat until thickened, about 5-7 minutes. Let it cool to room temperature.
