Ingredients

9 lasagna noodles

2 cups shredded cooked chicken

3 cups Alfredo sauce

2 cups shredded mozzarella cheese

1 cup grated Parmesan cheese

1 ½ cups ricotta cheese

1 large egg

2 cloves garlic, minced

1 cup chopped spinach (optional)

2 tablespoons chopped fresh parsley


Instructions

1. Boil the lasagna noodles until al dente, then drain and set aside.

2. In a bowl, mix ricotta, egg, salt, pepper, and optional spinach. Set aside.

3. If not using pre-cooked chicken, season and cook chicken breasts, then shred.

4. Preheat oven to 375°F (190°C) and grease a 9×13 baking dish.

5. Layer: a bit of Alfredo sauce, noodles, ricotta mixture, chicken, Alfredo sauce, cheeses. Repeat layers.

6. Top with remaining cheese.

7. Cover with foil and bake for 25 minutes. Remove foil and bake for 10–15 more minutes.

8. Let rest for 10 minutes before serving. Garnish with parsley.

Notes

To save time, use rotisserie chicken and quality store-bought Alfredo.
