2 chicken breasts

8 oz fettuccine pasta

2 tablespoons butter

1 cup heavy cream

2 cloves garlic, minced

1/4 teaspoon black pepper

2 tablespoons parsley, chopped (optional)

1/2 cup pasta water (reserved)


Instructions

1. Season chicken breasts with salt and pepper. Sear in a hot skillet with a bit of olive oil for 5–6 minutes per side until golden and cooked through. Set aside to rest, then slice thinly.

2. Cook fettuccine in salted boiling water until al dente. Reserve 1/2 cup of pasta water and drain.

3. In the same skillet, melt butter over medium heat. Add minced garlic and sauté for 30 seconds.

4. Pour in heavy cream and bring to a gentle simmer. Stir in Parmesan cheese until melted and smooth.

5. Add the pasta to the sauce and toss to coat, adding reserved water as needed to loosen.

6. Plate the pasta and top with sliced chicken. Garnish with parsley and extra Parmesan if desired.

Notes

For best flavor, always use freshly grated Parmesan rather than pre-shredded.
