Ingredients
1 lb chicken breasts (boneless, skinless)
2 cups sliced mushrooms (cremini or button)
3 cloves garlic (minced)
2 tablespoons butter
1 cup heavy cream
1/2 cup grated parmesan cheese
1 cup shredded mozzarella cheese
1 teaspoon Italian seasoning
1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon olive oil
Instructions
1. Pat chicken dry and season with salt, pepper, and Italian seasoning.
2. In a skillet, heat olive oil and sear chicken for 3 minutes per side. Set aside.
3. In the same skillet, melt butter. Add mushrooms and sauté until browned.
4. Add garlic to mushrooms and cook until fragrant.
5. Pour in heavy cream. Simmer and stir in parmesan until thickened.
6. In a baking dish, place chicken and pour mushroom sauce over top.
7. Sprinkle mozzarella evenly over the dish.
8. Bake at 375°F (190°C) for 25–30 minutes until cheese is bubbly and chicken is cooked through.
Notes
Sear the chicken just until golden; it will finish cooking in the oven.
Let the dish rest for 5 minutes before serving so the sauce thickens nicely.
