Ingredients
16 oz bowtie pasta
1.5 lbs boneless skinless chicken breast, cut into chunks
8 oz Velveeta cheese, cubed
1 cup shredded mozzarella cheese
1 cup heavy cream
4 cloves garlic, minced
2 tablespoons butter
2 tablespoons olive oil
1 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons chopped parsley (optional)
1/2 cup reserved pasta water
Instructions
1. Boil bowtie pasta in salted water according to package directions. Drain and set aside, reserving 1/2 cup pasta water.
2. In a skillet, heat olive oil over medium-high heat. Add seasoned chicken and cook until golden and cooked through. Remove and set aside.
3. In the same pan, melt butter and sauté garlic until fragrant. Add heavy cream and Velveeta, stirring until melted.
4. Stir in mozzarella cheese until the sauce is creamy and smooth.
5. Add pasta to the sauce, using pasta water to thin if needed. Toss in chicken and coat everything evenly.
6. Garnish with parsley, extra cheese, or black pepper. Serve hot.
Notes
