Ingredients
1 pound ground chicken
2 teaspoons sesame oil
2 cloves garlic, minced
1 teaspoon fresh ginger, grated
2 tablespoons soy sauce
2 cups coleslaw mix
3 green onions, chopped
12 egg roll wrappers
Oil for frying
Instructions
1. In a skillet over medium heat, heat sesame oil and cook ground chicken until fully browned.
2. Add garlic, ginger, and soy sauce. Stir and cook for another 2-3 minutes.
3. Add coleslaw mix and green onions. Cook for 2-3 minutes until slightly softened. Remove from heat and cool.
4. Place an egg roll wrapper in a diamond shape. Spoon 2-3 tablespoons of filling in the center.
5. Fold the bottom corner over the filling, tuck in the sides, and roll tightly. Seal edge with water.
6. Heat oil to 350°F. Fry egg rolls in batches, 2-3 minutes per side until golden.
7. Drain on paper towels and serve hot with your favorite dipping sauce.
Notes
To freeze before cooking, place rolled egg rolls on a tray and freeze until solid, then transfer to a bag.
Reheat leftover cooked egg rolls in an air fryer or oven to restore crispiness.
