Ingredients

1 pound ground chicken

1/4 cup grated onion

3 cloves garlic, minced and divided

1/4 cup chopped fresh parsley

1/3 cup breadcrumbs

1 large egg

1 teaspoon ground cumin

1 teaspoon paprika

1 teaspoon salt

1/2 teaspoon black pepper

1 tablespoon olive oil

1 cup plain Greek yogurt

1 tablespoon lemon juice

1 tablespoon water

1 tablespoon extra chopped parsley for garnish


Instructions

1. In a large bowl, combine the ground chicken, grated onion, 2 cloves minced garlic, chopped parsley, breadcrumbs, egg, cumin, paprika, salt, and black pepper.

2. Mix gently until just combined, then shape the mixture into 8 small oval kofta or patties.

3. Heat the olive oil in a large skillet over medium heat.

4. Add the kofta in a single layer and cook for 5 to 6 minutes per side, or until browned and fully cooked through.

5. In a small bowl, stir together the Greek yogurt, remaining 1 clove minced garlic, lemon juice, water, and a small pinch of salt until smooth.

6. Spread the garlic yogurt onto a serving plate or spoon it into bowls.

7. Arrange the hot chicken kofta on top, garnish with extra parsley, and serve immediately.

Notes

Do not overmix the ground chicken mixture, or the kofta can turn dense instead of tender and juicy.
